      • At the time of inspection low temperature dishwasher final rinse chlorine rinse concentration 0ppm.
      • Corrective Action(s):
      • Staff on duty manually diluted quats being dispensed from the chemical dispensing station to 200ppm and refiled the spray bottles. Ensure all food contact surfaces are sanitized with 200ppm quats. Obtain test strips to verify quats concentration.
      • After priming the sanitizer line 50ppm chlorine detected during the final rinse cycle. Verify chlorine concentration using test strips.
