- MEN'S PUBLIC WASHROOM:1) Observed grime accumulation on the bottom of the urinal and which requires cleaning. Moreover, would recommend deodorizer tablets be also placed in the bottom of same urinal.Noted that the amount of water dispensed in the bottom of the urinal for flushing is not sufficient - please reach out to a plumber to assess the urinal to determine if in good working order.2) Noted no deodorizer tablets in the bottom of same urinal - please place these tablets in the bottom of the urinal.3) Observed that the paper towel dispenser is loose and the mounted foam soap dispenser is empty respectively - will have later discussions with the owner regarding either fixing and/or replacing with more adequate dispensers for public hand washing and drying.FRIDAY MARCH 27, 2026 UPDATE:As discussed today, please complete above requirements on original inspection plus the following amendments:1) Relocate/lower existing paper towel dispenser for easier accessibility for all patrons - would also include the mounted foam soap dispenser.2) Check into the pricing for a hot air blow dryer - if affordable, purchase/install to replace existing paper towel dispenser. For patrons, two (2) hand drying dispensers in each bathroom would be recommended.3) Remove existing rusted chrome cover on urinal and replace with new one - reach out to a plumber to complete this.4) Purchase and mount a deodorizer for each washroom for odor control and management.APRIL 14, 2026 UPDATE:As discussed with the owner, extension has been granted till April 30, 2026 to complete the above requirements. Our Department does see progress and which is the reasoning for allowing an extension.

- 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
- Noted several containers of foods stored in the walk-in cooler were uncovered. As discussed with the owner, ensure all containers of foods are stored with tight fitting lids at all times to prevent the potential contamination of the food from the cooler environment.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- LOW TEMPERATURE MECHANICAL DISHWASHER (MACHINE IS OWNED):1) Verified that 5 gallon jugs of chemicals (e.g. - detergent, rinsing agent, sanitizer) is purchased through Costco.2) Confirmed that an adequate supply of chlorine test strip papers were available but expired in 09/24 (over a year past the expiry date). As discussed with owner, new chlorine test strip papers need to be purchased and the owner must ensure that regular testing of the sanitizing solution is completed and documented.

- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) Observed towels being used to capture excess water/moisture from glassware in the bar area at the front of the restaurant/dining area. This type of material is not acceptable and instead bar matting must be utilized for proper drainage of water from glassware.2) Noted that the ice machine door was open during the inspection and the ice scoops are being stored on the top of the machine. Based on this observation, ensure the door is always closed at all times and to store the ice scoops in a washable container and then placed on the top of the machine.3) Refrigeration unit to store all bottles of beer/alcohol requires a general cleaning and the front cooler vents is full of dust and requires immediate cleaning.
- 23. Is the facility maintained in a clean and sanitary condition?
- Observed that the level of cleanliness in the kitchen component is not satisfactory. In particular, hard to reach areas such as the walls behind the mechanical dishwasher and underneath/between equipment/cooking areas need significant improvement. As discussed, the owner will reach out to the Colony to have the kitchen professionally cleaned and would include all areas of the kitchen.Once completed, the owner will then reach out to our Department to inform and we would then subsequently reinspect to confirm cleanliness is up to our standards.UPDATE ON FRIDAY NOVEMBER 28, 2025:On-site discussions with the owner confirmed that the date for the required cleaning by the Colony has been set for this Sunday November 30, 2025 - the cleaning will be starting after the restaurant closes for the day.

- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- FLY LIGHT CONTROL DEVICE/PEST MANAGEMENT NOTES:1) Confirmed the purchase and install of a fly light control device which was purchased from Poulin's Exterminators. However, the unit is not properly installed (should be wall mounted and at the time of inspection was simply placed upwards on a shelving unit) and appears to be missing the front cover (to ensure it is sanitary by covering the sticky fly paper strip which is placed in the device). Please correct and refer to the owner's manual. Finally, as discussed, you may require another similar device at the back door entrance/exit (where staff enter and food deliveries occur).UPDATE TO APRIL 2, 2025:If front cover for device is not found, owner will then purchase another fly light control device. As discussed, the ideal location for this device is wall mounted near the back door entrance. Moreover, you may wish to consider the magnetized self closing screen mesh as an alternative to the existing traditional screen door currently in place for more effective pest control particularly during deliveries where the screen door may be propped open for an extended period of time.

Since the garbage bin and grease bin is located near the same back door, flies will be in the area waiting for an opportunity to enter. Our Department would encourage the owner to find other options such as air curtains or more easily movable mesh curtains to deter/reduce the entry of flies into the facility. All items listed above were discussed with the owner on October 23, 2024 and reiterated that all fly control measures are required to be properly addressed.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- As discussed with owner, existing ceiling pot lighting in the kitchen is inadequate and subsequently more similar type lighting is required to be installed to easier facilitate cleaning.Observed shadowing in all areas of the kitchen particularly where the cooking equipment/exhaust canopy hood is located and also in the back kitchen area where the stacks of pizza pans and stainless steel tabletop are located. Finally, for future reference, informed the owner that the ideal finish (particularly walls, floor, and ceiling finishes) should be light in color (preferably white) so the existing lighting in the kitchen will reflect off these surfaces and result in a brighter kitchen.

- 1) Observed cardboard on shelving units in the walk-in cooler - prohibited use since cardboard absorbs moisture and cannot be properly cleaned and sanitized. - 1) Purchase a fly light control device that is meant for food establishment. As a recommendation only, you should reach out to a pest control company (e.g. - Orkin) to obtain this device for fly control. Note that this was previously cited in 2023 and is still outstanding.2) Ensure a written monthly check is completed for pest control in the establishment - you can utilize our AHS pest control template to complete this written task.

There is a potential of contamination of food if the dead flies on the strip fall off and into the food.2) Purchase a fly light control device that is meant for food establishment. - Kitchen lighting levels is inadequate and more lighting is required to easier facilitate cleaning. Current ceiling pot lighting produces significant glare and does not fully illuminate finishes in the kitchen. There is currently one (1) pot light ceiling fixture which is not working in the kitchen and requires to be replaced/repaired as deemed necessary. An electrician should also be contacted to inquire about installing more pot light fixtures particularly near the cooking equipment and dishwashing area to provide more adequate lighting to easier facilitate cleaning.

- Measured no sanitizing chlorine solution in the dishwasher - appears to be an issue with an air lock in the sanitizing line. 5 gallon bucket of chlorine (purchased through Pegasus) was measured with the test strip papers and were satisfactory.Owner will need to reach out to the company which manufactured the machine and have the machine assessed to determine the problem. Reservoir of chlorinated water at the bottom of the machine was tested with both chlorine test strip papers (owner and the Hydrion papers supplied to EPH).
