      • The water temperature at the plate was not reaching 71 C+. It appears that the thermostat needs to be replaced; the owner will order one today.Your thermometer should be used at the start of the day to record the water temperature verifying the machine is working as intended.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Please provide soap at the sink near the drive through so that it may be used by staff to wash their hands. On the plan this sink is designated as a dump sink, however it may be used for both purposes. The other two handwash sinks were fully stocked. It's not ideal having the kitchen handwash sink out of sight i.e. blocked with shelving. A couple of ideas were discussed.

      • Final rinse temperature gauge is not working correctly.Please repair or replace.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The sandwich prep cooler was holding foods above 4 C. The thermometer in the lower part of the cooler was reading ~10 C, and the data logger was observed unplugged. I had staff probe food with their thermometer and I did the same and we were getting similar temperatures ~7-8 C.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Please verify when the kitchen exhaust was last maintenance as the sticker reads next service Oct 2020.

      • The sanitizer was too strong at the time of inspection.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • There was a fan blowing directly over the food preparation table. This was moved at the time of inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There is a cupboard door and one countertop edge that is in poor condition and cannot be properly cleaned and sanitized. There was a discussion about possibly removing the one door altogether and or finishing the edges where the arborite has lifted.
