      • Observation (CORRECTED DURING INSPECTION): Cooked rice was noted with an internal temperature of 56.0C in the hot hold unit.
      • Corrective Action(s): As per Manager, rice was brought to the hot hold unit at around 10 AM (current inspection time 11:15 AM).
      • Instructed Manager to reheat the rice - Manager brought rice to microwave for reheating, prior to placing back in the preheated hot hold unit.
      • Please ensure all hot food intended for hot holding must be reheated to at least 74.0C prior to placing in a preheated hot hold unit.

      • 1- Frozen food packed in boxes noted at -7C in walk in freezer. It was observed freezer is overloaded and this was discussed with staff. Also, Airflow noted blocked by boxes in front of the compressor fans.
      • 2- Upright 2 door freezer in the kitchen also measured at -2C to -3 C. This unit also have loads of boxes which hinder the door from closing. Rubber seal noted out of place as well.
      • Corrective Action(s):
      • Do not overload freezers.
      • Ensure rubber seals are properly in place and are in good working condition.
      • Ensure these units maintain freezing temperature below -18C.
      • Date to be corrected by: Nest routine inspection.

      • Observation (CORRECTED DURING INSPECTION): Beverage fridge is maintaining drinks at 9-12 degrees C. Staff stated that it was recently restocked but the morning temperature logs indicated it as 9 degrees C.
      • Corrective Action(s): Dairy was removed from fridge. Monitor closely to ensure that it is capable of maintaining potentially hazardous foods at 4 degrees C or colder. Repair or adjust if required.
