      • The mechanical dishwasher was not supplied with detergent at the time of the inspection.**Please ensure that the dishwashing equipment is supplied with all articles required for proper dishwashing at all times.**The staff replaced the empty jug of detergent during the inspection.

      • Quat sanitizer was dispensing too strong at 3 comp sink and measured above acceptable range. Cup of quat sanitizer that was at Iced Capp machine measured well above 400 ppm (immediately turned test strip blue-green). Please dilute solution within acceptable range 200-400 ppm until dispensing unit can be recalibrated. Test quat solution concentrations regularly.
