- Two sanitizer buckets behind the service counter were tested and were found to be at only 100 ppm quat. These were both remade at the request of the PHI and a recommendation was made to increase frequency of refreshing those buckets which are used most frequently.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Slow cooked pulled chicken in the hot holding drawer was found to be at only 52 degrees C. The label sticker indicated it had only been prepared 10 minutes prior. Employee was instructed to reheat item to 72 degrees C, prior to returning it to the hot holding drawer.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- The designated handwashing station nearest the drive through window was obstructed with a coffee pot and filter, despite having a drink prep sink nearby.

- The quat sanitizer dispenser was dispensing at only 100 ppm. The line was bled to remove air bubbles and then it was retested and found to be at the correct 200 ppm.

- Quat sanitizer buckets throughout the facility were tested and found to be at approximately 50 ppm. The dispenser was verified to be dispensing quat at a 200 ppm concentration. The time stamps on the buckets varied, but alluded to the fact that they were not being changed out on a 2 hour schedule. Ensure these are frequently changed and set a timer if need be for reminder.
