- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- 1. Ensure to clean and maintain in a sanitary manner the floor of the walk in cooler and freezer (food debris and dirt build up observed). 2. All ceilings and vents must be cleaned at a set frequency to avoid buildup of dirt and grease.
