- Observation (CORRECTED DURING INSPECTION): During lunch rush the internal temperature of potentially hazard's
- foods in prep insert cooler registered between 5 - 7C. Staff indicated cooler unit was recently serviced. Using ice both under inserts in an attempt to keep temperatures below 4C. Food that is potentially hazardous stored between 4C - 60C have increased risk to grow pathogenic bacteria and terms which can spread to the public if temperature based food is consumed.
- Corrective Action(s): Keep insert cooler lid closed for as long as possible. Monitor internal temperatures and move any food product that is above 4C to the cooler unit below.
