    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Drink display fridge was warm, around 16C with IR thermometer, temperature gauge on the bottom read 62F. Drinks were mostly shelf stable (waters, energy drinks, etc.) however some milk cartons were stored in this fridge and were discarded onsite. - Do not use this cooler to store any high-risk items until it can hold temperatures below 4C.2) Some butters were out at room temperature past their "use-by" time. - Discard butters, ensure items are not held at room temperature for more than 2 hours unless procedures have been approved.

      • Savory pastry's that are held at room temperature were not marked with the time which they were made, or when to use by. - Staff said that they were made at 8am, and a sticker was made indicating the time they need to be used by. Please ensure all items using time as a control are marked with the time they need to be used by.
