- Observation: Dishwasher not working properly. Wash water temperature observed on guage at 128 F to 141 F. Manufacturers minimum specification is 150 F. Final rinse temperature on guage displaying less than the minimum manufacturers specifications of 180 F. Confirmed with my thermometer. Ran cycle multiple times with some increaase, but not to minimum plate temperature of 71 C or guage temperature of 82 C. Discussed with operator.
- Corrective Action(s): Immediately switch dishwashing to manual method using three compartment sink until unit is working properly. Have staff set up triple sinks for manual dishwashing. Get service technician in to fix unit. Send confirmation picture of unit within operating ranges. Follow up inspection as noted on report.

- Observation: Fruit/drain flies noted at mop sink area. Also noted minor build up of biomat/slimes in and around mop sink trough and grate.
- Corrective Action(s): Target this station daily for enhanced cleaning to break breeding cycle. Step 1 - clean entire mop sink and surrounding area; step 2 - spray and leave cleaned surfaces with floor cleaner or sanitizer to reduce breeding attraction. Step 3 - at the end of the day pour hot or boiling water down drain followed by chemical floor cleaner or similar and leave. Repeat daily until flies eliminated.

- Observation: Corners and other hard to reach areas observed with minor build up of food debris. Likely multiple days build up. Discussed and showed to operator. Details to cleaning could be improved.
- Corrective Action(s): Ensure staff understand importance of cleaning difficult to reach areas of premises, as these areas will spread to other parts of the premises.
- Give hard to reach areas of facility, especially below shelving or under counters added attention when cleaning. Verify cleaning at follow up inspection date noted.

- Observation: Fruit/drain flies noted in several areas of premises. Discussed with staff and problem recently developed. Areas where adult flies noteable include:
- - Below counter at handsink by drive thru and on wall above this area;
- **Water has infiltrated between the sink and counter top to the MDF underneath, which over time has become a significant breeding environment for the flies.
- - Below counter at floor drain by Freezer condensation line;
- * Biomat observed at drain, in drain and in copper condensation line dripping into drain. Biomat indicative of stagnant nutrient enriched waste water and is a good breeding environment for drain/fruit flies.
- - Around grease trap lid below dish sink;
- - At mop sink area especially around ladder to roof.
- Corrective Action(s): The handsink must be taken off counter, cleaned up, repaired (including resealing the wood underlay) such that water can't leak under the sink.
- All noted floor areas must be cleaned daily and dry mopped to eliminate any remaining ponding water.
- It is recommended the floor drains get treated with hot water and cleaning agent daily until breeding cycle of flies broken.
- Contact Pest Control technician for additional support and advice related to the infestation.
