      • The dishwasher was not operational. The manager stated that a part was missing and has already been ordered. Until the part arrives and the dishwasher is repaired, they plan to rent a dishwasher from EcoLab. In the meantime, they are using the three‑compartment sink for dishwashing.-Repair/replace the dishwasher.

      • A fly was noticed in the front and back kitchen.-Monitor for any activity.

      • Sugar bulk container had sugar particles on the lid.-Clean the lid.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Coffee was dripping on the floor.2) Area around the hand wash sink had food/food particles on it.3) Area under the prep line cooler had accumulation of dirt, food debris and food particles.4) Spill was noticed on the floor of the walk-in cooler.-Clean the areas mentioned in 1) to 4).
