    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Drain fly infestation observed at sinks in the back and in approximate location to the ice machine drain. This drain has been covered with a solid cap, but the cap has been cut into for added drainage. This drain is now available to the flies to breed in, but is not accessible for cleaning and pest control. Also, the area directly below the ice machine is wet and may also contribute to the harbourage of drain flies.
      • Corrective Action(s): The drain fly infestation must be controlled. Any areas within the premises that can contribute to the breeding cycle of these insects must be kept clean, dry and free of enviroments suitable for breeding.
      • Contact Pest control for support in remediation.
      • The floor drains must be accessible and regualrly cleaned as part of the Tim Hortons Sanitation plan and any required pest control initiatives.
      • This will be reviewed at follow up inspection date noted on report.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Exposed electrical conduits and rough millwork still visible at the back of some of the cabinetry along the counters in the front of the premises. This has allowed the entry of food debris, dust and packaging material. It is not clean.
      • Corrective Action(s): Properly block off any exposed millwork and electrical work such that all areas of the premises are easily cleanable for staff. This should have been addressed during the construction phase of the work and inspected by this office.
      • A re-inspection will be conducted on date noted on report.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Sani-buckets measured below 200 ppm quats solution when tested (between 0 and 150 ppm). Main dish sink tested similarly low. Drained sink and refilled with quats solution. Again solution tested low (less than 150 ppm). Observed air gaps in line and unusual bubbling in line when feed is turned on. Transport line is very long.
      • Corrective Action(s): Implement manual feed of quats concentrate to main sink until unit is repaired. Add about 6 to 8 OZ quats to 8 to 10 GAL water in sink? Make sure to drain and refill sanitizer sink every two hours so the sani-buckets can be re-filled with proper quats solution at their required interval. Make sure staff check solution, especially that in the sink to ensure concentration is at 200 + ppm.
      • This will be checked at follow up inspection date noted on report.

      • Observation (CORRECTED DURING INSPECTION): Staff on-site without FoodSafe training and without direct supervision with Foodsafe trained staff.
      • Corrective Action(s): Manager returned to premises during inspection. Discussed. Store staff on "waiting list" for in-house FoodSafe training. No date set. to be cleared up by next scheduled inspection.

      • Observation: Sandwich prep cooler product inserts measured 12 - 13 C. Cheese at 12 C, Ham at 12 C. Staff unable to verify when the last temperature checks have been made. Managers only can do this. No manager on shift.
      • Corrective Action(s): Potentially hazardous foods in this unit for greater than 2 hours must be discarded immediately. Replace foods in this unit and supplement all inserts and potentially hazardous food products with ice. Have unit serviced ASAP. Review of this unit and processes will be completed by re-inspection date noted on report.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Three sink method for dishwashing in place, but one sink stopper available (not correct design). Staff do not know where the proper sink stoppers are located. Impossible to implement proper three sink method of dishwashing without proper sink plugs.
      • Corrective Action(s): Obtain replacement plugs such that proper dishwashing can take place. This must be done immediately and verified at follow up inspection date noted on report.
      • Violation Score: 15

      • Observation: Staff on duty do not have foodsafe.
      • Corrective Action(s): At least one employee on shift at all times must have foodsafe level one. Get this done and ensure at least one employee is Foodsafe trained at all times.
