- - Shell eggs were found stored at room temperature without a time label. Staff explained that the label had been removed temporarily for updating. The surface temperature of the eggs was measured at 15.5°C, and the internal temperature was 14.9°C. Staff stated that eggs are typically kept at room temperature for up to two hours, after which they are transferred to the egg cooler if not used.*Shell eggs can only be held at room temperature for a maximum of one hour. Any eggs not used within that time must be discarded to ensure food safety.**Relevant documentation has been emailed along with the report.

- - The dishwasher was in use at the time of inspection. The average temperature recorded during the first three wash cycles was 66°C. Staff ran multiple cycles, the temperature reached 71.1°C at the plate level on the eighth cycle.*The dishwasher requires servicing to consistently meet the required sanitization temperature.**Staff will sanitize dishes using the three-compartment sink method until the dishwasher temperature is corrected and verified.
