      • Observation: Observed equipment not in good working order; back hand washing sink leaking and cold water turned.
      • Corrective Action(s): Ensure that back hand washing sink leak is fixed. Ensure that hand washing sinks are adequately equipped with running hot/cold water, paper towel and liquid hand soap in a dispenser.
      • Correct by: Immediately.

      • Observation (CORRECTED DURING INSPECTION): Observed QUATs surface sanitizer solution in a few buckets at the front registering below 200ppm, ranging between 0 and 150ppm.
      • Corrective Action(s): Ensure that QUATs surface sanitizer solution concentration is at 200ppm and change solution as required, to ensure proper sanitation. QUATs solution changed during inspection and now registering at >200ppm.

      • Observation (CORRECTED DURING INSPECTION): All of the sanitizer buckets inside the kitchen has 0 ppm QUATS sanitizer. There is no QUATS sanitizer at the dispenser by the 3 compartment sink. Bacteria will grow on wiping cloths, which can be transferred to food contact surfaces if they are not kept in an adequate sanitizing solution.
      • Operator said that their QUATS sanitizer expired and a staff member is picking up QUATS sanitizer from another location. Fresh QUATS sanitizer was available 30 minutes into the inspection.
      • Corrective Action(s): Ensure that there is 200 ppm QUATS sanitizer at the dispenser and inside sanitizer buckets at all times. Monitor the supply of QUATS sanitizer frequently to ensure it does not run out while the facility is in operation.
      • Concentration of QUATS sanitizer from the dispenser and inside the buckets is 200 ppm from the dispenser
