- Observation: Fruit flies observed landing and resting on pastry shelf adjacent to customer service area. I did not observe any food in the display case contaminated with fruit flies. Requested staff immediately throw out contaminated croissants. They complied.
- Corrective Action(s): Until such time that the fruit fly infestation can be rectified all exposed food much be adequately protected. It may be the donuts and pastry cases need a proper covering, not just plastic wrap. review at next inspection.

- Observation: Fruit flies observed in significant numbers in premises, mostly flying and crawling around grease trap. The grease trap is clearly a significant breeding envrionment for the flies. There remains missing and/or unscrewed screws preventing the lid from closing properly and is likely allowing, in part, flies to access the inner part of the grease trap. There is also food debris around the lip of the lid, and when combined with water from the sinks, may provide an excellent food source for the flies. Also noted a sticky trap over this area attached to theceiling. The placement of these sticky traps above food prep or storage areas has been flagged for removal in previous inspections.
- Corrective Action(s): Immediately have pest control technician called to address fruit fly infestation. Target the grease trap for immediate remedy.
- **Continued presence of fruit flies in this food premises may result in further inforcement action including premises closure.
- Follow up inspection will take place in two weeksas noted on report.

- Observation: Fruit flies still present in premises, concentrating around the dishwash station but also to lesser amount in other areas. Floor around dishwash station mostly dry, although grease trap lid is missing screws possibly providing access for fruit flies. It is possible there is water ponding behind the wall where the plumbing conduit enters and this should be investigated for renovation improvements. There are lots of fruit flies below the sinks. Minor build up of bioslimes around one of the sink drain pipe connections at sink basin.
- Floor drains may also be contributing to breeding.
- *Sticky traps have been placed above the dishpit, and at drive thru.
- Corrective Action(s): Please limit sticky trap placement to below dish sinks and not in food prep or processing areas as discussed. Remove these traps as discused.
- Block screw holes in grease trap and make sure the seal is tight to prevent fruit fly access.
- Target floor drain at dishpit cloesest to ovens as possible/likely source of breeding. Remove floor grate, clean vertical pipe to water and apply hot water and chemicals DAILY to help break breeding cycle.
- Re-inspect in two weeks to measure improvements.

- Observation: House fly and fruit fly activity noted in select areas in premises.
- House flies - Observed in lower, isolated pockets of space including garbage bin cavities and under dishwash sinks, and in the general work space in prep areas. There was a wasp in the donut display case, but it is likely flies also access this space. One light trap noted in kitchen space.
- Fruit flies - Observed close to dishwash station, potentially coming out of openings in grease trap and adjacent floor drain. Also observed under counter below sink and garbage space next to flavoured syrups station. The cavity between the wall and sink drain pipes full of garbage, and also subject to sludge development as witnessed and discussed with manager.
- Corrective Action(s): A) House flies are likely entering building from the outside and this will be a seasonal issue to address. Discuss with pest control additional measures to control house fly activity in food premises, but consider the following remedies to help with the immediate fly population:
- - place sticky tape below dish sink space and in garbage cubby spaces only. DO NOT PLACE IN OR ABOVE FOOD PREP STORAGE AREAS as discussed.
- - Consider adding a light trap to the customer area.
- - Affix and position fan at drive thru window outward/downward to prevent flies from catching air currents into building.
- B) Clean up space behind partition at garbage/sink drain cubbies. Remove garbage as discussed and make sure this space is kept dry. Make sure any drain pipes are clean and free from sludge build up. Better seal grease trap openings and clean this space daily. Make sure to put procedures in place to clean floor drains on daily basis (hot water and chemical to discourage breeding).

- Observation: Moderate amount of fruit flies noted under and above dish sink area. Very little activity in other areas of premises, so likely the dish sink area general cleanliness contributing to breeding. Edges of grease trap lid and adjacent tile grout grooves observed with accumulations of food debris that is both wet and stagnant. A certain amount of biodecomposition is occuring in these cracks which is a potential food source for these pests. It is also possible the lid to the grease trap is not tight and these pests are accessing the grease trap itself and contributing to increased breeding.
- Corrective Action(s): As discussed target this area for increased daily cleaning. Make sure to remove (scrape out if necessary) the accumulations of food debreis from the noted area and better manage the daily cleaning of this environment. Target the cleaned grooves (and local floor drain) with floor cleaner spray, and leave. This should act as a breeding deterent.

- Observation: Several areas of premises observed with excessive accumulations of food debris, mostly limited to floor in hard to reach or see including:
- - Area behind bake ovens next to donut glazing station. Significant build-up around electrical and plumbing hoses and down and around floor drain.
- - Floor behind and below countertop coffee machine and iced coffee station. Leaking water migrating to back counter down to floor. Stagnant water is puddling below on floor.
- - Walk-in cooler floor, especially under shelves and around black plastic shelf supports.

- Corrective Action(s): These areas must be targeted for improved cleaning to maintain general sanitation and prevent migration of unsanitary conditions to other areas. Floor drains must receive daily cleaning (including the vertical pipe network below grade to remove and prevent build up of food debris and biomat development. These areas can and will be used as breeding habitat for drain and/or fruit flies in summer months. Review at next scheduled inspection.

Tested at sink below 150 ppm, but most of the sani-buckets measured above 200 ppm. Staff noted detergent dispenser not working pproperly and technician called to fix.
- Corrective Action(s): A) Make sure all three sinks are available for ware washing and three compartment sink method of dishwashing always in place.
- B) Acquire three sink stoppers to allow for easy three compartment dishwashing can be completed by staff.
- C) Make sure chemical feed lines and movement of concentrates not obstructed in any way. THis will ensure consistent dosing, especially for the Quats sanitizer.
- D) Make sure service technician checks and fixes all dispensing lines accordingly.
- E) Additional drying rack may be necessary above dishsinks to ensure dishes are properly dried and access to the sinks is not compromised.
