      • Observation (CORRECTED DURING INSPECTION): Walk in cooler ambient temperature measure 11-12C. Probed cream cheese 9.6C, sliced roast beef 10.1C.
      • Manager stated that the walk in cooler compressor not working properly. Temperature has been high since the beginning of her shift at 5am.
      • Main Prep coolers ambient temperature measure 12C. Probed sliced cheese 10.9C, sliced ham 11.7C.
      • New delivery of items (eggs, cheese, milk, meats, sliced lettuce, etc) came into store 1hour before inspection and stored in walk in cooler.
      • Corrective Action(s): All potentially hazardous foods in prep cooler and walk in cooler and prepared foods discarded. (Eggs, cheese, sliced lettuce, sliced tomatos, patties, roast beef, whipped cream, cream cheese, shredded cheese, opened sauces, etc)
      • All new delivery of items have been moved to an different branch and stored those coolers until these coolers are fixed. All defrosting items that hasn't been fully defrosted also moved to different location.
      • Violation Score: 25

      • Observation: Walk in cooler ambient temperature measure 11-12C. Probed cream cheese 9.6C, sliced roast beef 10.1C.
      • Main Prep coolers ambient temperature measure 12C. Probed sliced cheese 10.9C, sliced ham 11.7C.
      • Corrective Action(s): These coolers must be fixed and be able to maintain 4C and below.
      • To be corrected by: Tomorrow.
      • Do not store any potentially hazardous foods in these coolers until it can maintain 4C and below.

      • Observation (CORRECTED DURING INSPECTION): Perishable food items are being double stacked ontop of prep line inserts.
      • Corrective Action(s): Do not store food items ontop of prep cooler inserts. keep perishable items inside the cooler - small volumes - quick turnover.

      • Observation: Food/debris noted in drip trays - do not appear to have been cleaned for extended periods. (Ie: Sugar dispenser.) Food/debris noted behind partitions below handsinks. Replace/secure corner bead in service area. Ice build up noted on ice capped machine - area below and around machine needs cleaning.
      • Corrective Action(s): Clean and organize, as discussed. Drip trays are to be cleaned nightly. Remove partitions below handsinks - clean surfaces/areas behind partitions. Pull ice capped machine away from wall - clean behind and defrost ice build up. Secure corner bead.
