      • * Hot holding for some items was observed to be under 60C. Food temperature was measured with an infrared thermometer and then with a probe thermometer. Probe thermometer was used to measure internal temperature 48 C (cooked potato wedges and 55 C (cooked crispy chicken) in the hot holding units.
