      • Observation (CORRECTED DURING INSPECTION): The handwash station and dump sink at the front of house both cannot supply hot water. The main handwash station at the back of the house able to supply hot water.
      • Corrective Action(s): Repair the plumbing fixtures at the front of house to ensure hot/cold running water can be supplied to all the fixtures. In the meantime, all employees and handwashing must be done at the handwash station at the back.

      • Observation (CORRECTED DURING INSPECTION): Observed the employee at the front of house go from non-food preparation (cashier) to food preparation activities (handling donuts/baked goods) without handwashing multiple times. Employee also handled food and touched soiled door handles of the swing door.
      • Corrective Action(s): Proper handwashing is essential to prevent cross contamination onto ready to eat foods. Employees must wash their hands with soap when going between food activities to non-food activities. EHO educated employees on proper hand washing and to retrain staff on importance of handwashing.

      • Corrective Action(s): Clean all surfaces and degrease floors immediately to reduce flies.
      • Change your saturated fly trap (in 3 comp sink area).
      • Add more fly traps.
      • Add a fly light in the dry storage area.
      • Thoroughly clean behind all areas and floors.
      • Keep sandwich counter, baked goods and all food items covered and protected.

      • Observation: Walk-in cooler measured 8.5 C in cheese slices on shelves. IR check at 9 to 10 C. Left probe thermometer in unit for 30 minutes with no change. Operator called for service technician. Will be there today.
      • Corrective Action(s): Remove all hazardous products from unit until it maintains less than 4 C if unit can't be fixed immediately.

      • Observation: A) Observed house fly and fruit fly activity in kitchen area. Light traps full of flies, likely due to poor trap maintenance practices and fly activity in general. Several sticky tape traps present with flies stuck to them in or close to food prep areas. Dead flies noted on floor under dish sinks. Pictures taken.
      • B) Mouse droppings noted under cooler unit at donut glazing station. Difficult to assess the extent of activity due to the accumulations of food debris throughout facility. Mouse traps observed in multiple areas of premises. **Noted electrical room has significant mouse activity, accumulations of food debris and potential access via conduits in and out of this room.
      • Corrective Action(s): A) Remove all sticky tape from operational use. service light traps and clean them out. floor drain maintenance and cleaning, general cleaning of floor tile grout, and clean up of accumulations of food debris needed throughout facility.
      • B) General and thorough clean up is needed in hard to reach areas and corners of facility to reduce availability of food source to rodents. Block off access for rodent movement throughout facility needed, especially at plumbing/electrical networks leading into and out of facility.

      • Observation: A) Floor tile in many parts of kitchen is not easily cleanable. Patterned textured surface of some of the tile makes it hard to see the build up of debris and is difficult to clean. The floor tile grout has deteriorated and is difficult to clean food is accumulating in the grout. The edges of the floor wall connection has significant build up of food debris and is difficult to clean.
      • B) A selection of the cabinetry under the counters in the kitchen and servery area is significantly deteriorated. The wood structure is bloated with moisture and flaking away. These areas are both difficult to clean and the deteriorated wood product can potentially contaminate food. Pictures taken.
      • Corrective Action(s): The entire facility requires a thorough cleaning and any accumulations of food and debris removed. A plan should be put in place to replace the textured floor tile, removal and replacement of the tile grout and removal and replacement of the deteriorated wood cabinetry in the kitchen area.
      • Send action plan for upgrades to facility within 30 days.
      • Re-inspection for general cleaning as noted on report.

      • Observation (CORRECTED DURING INSPECTION): Between Milk Bags, 2nd crate down, 12.1C surface temperature, 12.9C minimum temperature taken over 1.5hrs.
      • Internal temperature, sliced beef in wrapped stainless steel box 12.2C.
      • Butter 10.1C surface temperature.
      • Ambient temperature between 12-13C after 1.5-2hrs.
      • Operator said this walk in cooler has had issues.
      • Temperature recorded by staff at 2:10PM show 4C or lower.
      • Corrective Action(s): Operator moved all potentially hazardous food items to working cooler or alternate Tim Hortons with time/temperature tracking.
      • Slice beef was discarded. Thank you.
      • Majority of stock was received today.
      • Calibrate and install more than one working thermometer in this cooler. Cooler is older walk in.
      • Operator called to have cooler fixed by contractor during the inspection.
      • Monitor the temperature closely and record to ensure it stays at 4C or lower.

      • Cheeses appear to have some dried edges and appear temperature abused.
      • Cheeses are stacked high, above the container level.
      • Lettuce appears wiltering.
      • Corrective Action(s): Operator agreed to use up within 1hr. Thank you.
      • Store limited quantities inside, change up with new containers often, every 2hrs is recommended.
      • Check temperature and record beginning of shift to ensure cooler is keeping 4C overnight and working properly (rule out that it is from opening and closing or if it is the cooler that is the problem).

      • Observation: 1. One hand sink at the front is not working. Operator has called the plumber.
      • 2. One of two ovens not working.
      • 3. Seal on back cooler (milk) is broken, small gap at top leaking cool air. Items in this cooler <4C.
      • Corrective Action(s): Please ensure that you encourage staff to wash hands as much as possible.
      • Use soap from non-working hand sink and temporarily wash at other sink at the front or use the sink at the back.
      • This is especially important for making sandwiches and other ready to eat items.

      • Corrective Action(s): Clean all counter-tops, plexi-glass covers for shelving above and all shelving thoroughly. Ensure that a strong air curtain fan is in place to exclude flies entering through the drive-thru pick up window. The air curtain fan does not appear to be strong.

      • Observation: 1. Noticed the coffee makig flasks stored too close the hand wash sink in the back of the house. There is no splash gaurd around the hand sink and this may lead to splashing on any utensils stored next to the hand sink.
      • 2. No plexiglass cover observed on the stainless steel shelf above the glazer (glaze station).The shelf appeared dirty.
      • Corrective Action(s): 1.Install a splash guard especially on the lef hand side of the hand wash sink. ( By Feb. 10, 2019).
      • 2. Clean the shelves above the glaze station thorouhgly and cover them with a plexi-glass cover ( By January 25, 2019)
