    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • - Plumbing leak/backup occurring with the dishwasher and next door walk-in cooler floor drains. Facility manager reported this issue to building maintenance and a plumber was scheduled to come out. Repair this plumbing issue and ensure that any food in the walk-in cooler is stored well away from and protected from contamination (tubs with lids for soft sided packaged products is recommended). Do not store any products directly over the floor drain including on carts. Had all lower shelf product transferred higher or to another cooler during the inspection. -June 19/26: Manager indicated that a plumber had repaired a leak in the walk-in cooler condenser piping - floor in the WC was dry. However, evidence of a dishwasher leak seemingly related to the rinse aid was noted under the dishwasher next to the floor drain. Discussed this issue with the facility manager, have a plumber/dishwasher repair technician assess and repair this leak.

      • Gaps to the outside noted at the base of the back kitchen door. All exterior doors must be completely sealed to the outside to prevent the entry of pests and/or vermin.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Vent hood service sticker indicates that the next service was due in March 2026. Have the vent hoods serviced and new stickers affixed.

      • The following items/areas were visibly dirty and require cleaning:- storage rooms floors along baseboards - June 4/26: debris still present along baseboards and under storage lifts - discussed with manager.- Baseboard/flooring behind ice machine and under hand sink.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Wing sauce bulk containers were stored on ice under the wing table next to the pizza oven. Sauce was probed at 17C. Discussed issue with facility manager and food handler. Affected sauces will be discarded and in the future the bulk containers will be stored in the cooler.Alternatively, sauces could be hot held above 60C.

      • Gaps to the outside noted at the base of the back kitchen door. All exterior doors must be completely sealed to the outside to prevent the entry of pests and/or vermin.Potential mouse activity (droppings) noted in the small back storage room along the back wall and near the bait trap. Pointed out areas of concern to facility manager and requested that pest control services assess the area and treat as needed - she indicated that she would have pest control out the next day. Ensure all food products are protected from contamination and the affected area thoroughly cleaned/disinfected (using PPE).

      • Can opener blade was chipped and required repair and/or replacement.

      • Cheese at the pizza prep station measured greater than 4C (5.7C) product was discarded. Discussed food handling practices with staff and facility manager to prevent this issue in the future.

      • The vent hood service stickers indicated that the next service was due in July 2024. Have the vent hoods serviced as required and update the service stickers.

      • A leak was noted at the hand sink in the dish washing area causing excess water on the floor in this area. Identify/repair the cause of this issue. November 18, 2024: excess water was noted on the floor in the dishwashing area. The manager indicated that there was an issue with the ventilation system there that was causing some of the water build up. Identify the cause of the excessive water and resolve the issue - in the meantime ensure the floor is mopped/squeegeed often and it is recommended that anti-slip mats are placed for worker safety.

      • The plastic dough docking tool was in disrepair with multiple tines broken off. Discontinue use of this equipment and ensure utensils are continuously monitored for condition and replaced as needed.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Hot held food items above the sandwich prep station measured less than 60C. Items were reheated during the inspection.Ensure the hot holding unit is monitored and set to the appropriate levels to maintain the products at the required temperature. Cold held products in the sandwich prep cooler measured above 4C. The project manager indicated that a barrier is being installed between this cooler and the toaster oven immediately next to it to help maintain temperatures. Ensure product temperatures are monitored frequently in this unit and discard any product that has been above 4C for 2 hours or more - discussed product turnover rate with regional manager and he indicated that most products in this unit would be used prior to that time.

      • The vent hood service stickers indicated that the next service was due in 2022. If the service has not yet been completed as part of the renovation, have it completed and if it has then have updated service stickers installed.

      • A leak was noted at the hand sink in the dish washing area causing excess water on the floor in this area. Identify/repair the cause of this issue.Wall was damaged in the conference room that is becoming the new food storage area and requires repair/refinishing.Ceiling tiles in the new food storage areas were acoustic tiles - ensure tiles of non-porous, cleanable material are installed in food storage/handling areas.

      • The following items/areas were visibly dirty and require cleaning:- cooler door handles - in front Tim's area- Pizza 73 will need a final clean once work is completed - Ice machine

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Wiping cloths were observed stored on counters with no sanitizing solution present. Sanitizing solution was prepared during the inspection and wiping cloths were transferred to the solution. Sanitizing solution measured greater than 200ppm QUAT. Have the automated dispenser serviced to ensure the appropriate calibration is achieved. In the meantime, utilize the test strips and add water to the solutions to obtain the required concentration.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Observed staff using the food prep sink to wash hands improperly - no soap used.Staff was stopped and informed of proper hand washing procedures and asked to proceed to the hand washing sink where soap and paper towel supplies were available for proper hand washing.Ensure all staff are trained on proper hand washing procedures.

      • Hot held soups measured below 60C. Staff were asked to discard soups during the inspection.Ensure all hot held products are held above 60C at all times.
    • 17. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Critical)?
      • A large tank from the fire suppression system was partially blocking the back hand sink and restricting access to it for food handlers. Move the tank away from the hand sink.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Construction work is still ongoing in the Pizza 73 front food handling area, the back food handling area, the office, and the staff area. Ensure work is completed in a manner that prevents contamination of food during operational hours. - Ceilings, walls and finishes in these areas must be smooth, non-porous, and easily cleanable.

      • A shelf in the walk-in cooler was less than 6 inches above the floor. Raise the shelf up higher. The vent hood service stickers indicated that the next service was due in 2022. If the service has not yet been completed as part of the renovation, have it completed and if it has then have updated service stickers installed.

      • The soup hot holding unit did not seem to be working properly - dial turned to max with no light indicating power and staff indicated that the unit had been inconsistent.Do not use this unit until it is repaired/serviced and/or replaced.

      • Construction work is still ongoing in the Pizza 73 front food handling area, the back food handling area, the office, the staff area, and the staff washroom. Including vent hood installation, wall covering installation, and ceiling installation. Ensure this work is completed in a manner that prevents contamination of food during operational hours. - Ceilings, walls and finishes in these areas must be smooth, non-porous, and easily cleanable.
