      • At the time of the inspection, the floor of the front counter food handling area had been removed, and the subfloor was covered cardboard sheets, where the seams were covered in Tuck Tape. The cardboard appeared to be unsoiled at the time of the inspection.The customer area flooring, main kitchen flooring, and dry storage area/office flooring were not affected.The flooring of the staff side of the front service area was indicated to be in the process of being replaced. Work is scheduled be completed by June 22, 2026.The prior temporary floor covering has been replaced since the prior inspection to ensure that it is not soiled. Ensure that the replaced flooring is smooth, non-absorbent, and easily cleanable. Ensure that any transitions between the new flooring, and the existing sections of flooring are also easily cleanable and non-absorbent.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The facility's front counter display refrigerator was maintaining a temperature of 7 degrees Celsius at the time of the inspection. After observing the temperature of the unit throughout the duration of the inspection, the temperature did not decrease.Staff members were directed to move any pastries that require refrigeration to the kitchen's refrigerator.Ensure that the indicated display refrigerator is able to maintain foods at a temperature of 4 degrees Celsius or less prior to restocking it with high-risk foods that require refrigeration.

      • The facility's display refrigerator was not holding an appropriate temperature at the time of the inspection. Furthermore, the interior right hand side sliding door frame had a piece of duct tape attached to it.Ensure that the unit is made to be in proper working order prior to storing foods that require refrigeration in it.Ensure that the duct tape is removed from the unit, as it is not a surfacing that can be easily cleaned.

      • Ice machine observed to have mold growth.*Action: Please ensure ice is discarded and the ice machine is washed and disinfected.

      • Pastry display cooler measured with probe thermometer at 7C. The shelves in the display cooler have ceramic plates holding food items (5 plates per shelf, no gaps between plates).PHI asked operator to remove one plate per shelf and remeasured the temperature at 4C and declining.ACTION: It would appear that the air circulation is disrupted when the plates block the entire shelf. Please allow for sufficient gaps by removing one or more plate(s) from each shelf.

      • CDI: Observed thawing at room temperature of sandwiches containing meat and cheese, and desserts containing dairy. Products left to thaw on tray rack outside of kitchen.Discussed with operator the risk with thawing high-risk food at room temperature. Operator had staff relocate thawing food to the cooler and stated that this change in process is already in progress.Milk cooler measured between 4-7C due to frequent opening and active use during inspection. Operator stated he will attempt to reduce set temperature.In compliance: coolers measured below 4C. Freezers measured below -18C. No hot holding observed.
