    • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): Dedicated handsink not available for use. Paper towels poorly located and no soap available. Faucet also broken. The space around the sink has been taken over by the dry food storage needs. Double sinks (used as back up handwashing) have soap but no paper towels. In general, handwashing facilities not well organized.
      • Corrective Action(s): Make sure the dedicated handsink is properly stocked with soap and paper towels (with dispenser) at all times. Make sure alternate handsink is also properly set up for use as discussed.

    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: A selection of frozen pizzas observed stored on floor. Space in upright freezer extremley limited. Staff needed to move food out to make room. Unit temperature guage indicated -18 C, but ambient measured at C. There is no space for the movement of cold air to allow foods to get to or hold adequate frozen temperature.
      • Corrective Action(s): Improve space in freezer to allow cold air to flow better. Reduce ordering volumes and increase ordering frequency to promote better freezer storage use as discussed. May need to invest in additional freezer space in future as discussed.

      • Observation: Handsink faucet is very loose and not useable.
      • Corrective Action(s): Fix the handsink and send/email pic of completed work within ten business days.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Area behind the dishwasher is not being adequately maintained. Window sil is not clean and many dishes and plates have been left to accumulate. Below the dishwasher it appears there is build up of food debris and crystalized chemical build up.
      • Does not appear the dishwasher is moved on a regular enough bases. Floor is substantially dry, but a towel is placed below in case of overflow.
      • Mop room is dirty and disorganized. Floor in mop room has buckled and is impossible to properly clean.
      • Corrective Action(s): Clean area above areas as discussed and ensure to include in regular cleaning schedule to avoid any build up of food debris.
      • Repair floor in mop room floor. Clean up. Send in a remediation plan to this office. Thirty days timeline for plan to review.

      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Operation still using dish cloths to support air-drying of dishware. drying rack is available, but not sufficiently used. Dish rotation is the key to effective use of drying rack.
      • Corrective Action(s): Eliminate the use of dish cloths in kitchen. Implement a system for rotation and use the drying rack exclusively.

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Dishwasher is still leaking and towel used to contain leaks during operation. Towel soaked. Also observed development of black mould behind unit at window ledge, but may be more extensive if water has migrated into wood structure of cabinetry. Also observed an accumulation of dishes and debris behind unit, due to the proximity to the window space.
      • Corrective Action(s): Dishwasher must be fixed such that there is no water leaking onto the floor (and migrating into the wood cabinet structure). Have serviced by technician. If unit cannot be properly repaired, replacement may be necessary.
      • When unit is serviced, clean up debris. Also, improve barrier to reduce the chances of dishees and debris from falling behind unit.
      • Follow up inspection required to confirm issue has been addressed. Send picture to this office of completed work. See date noted on report.

      • Observation: Dishwasher temperature is ok. Measured at 71.5 C.
      • **Dishwasher is leaking and water is pooling on floor and under unit. Staff are using towel to soak up some of the excessive water. Sludgy water mixed with food debris noticed on the left side of unit. Water is migrating into the kickplate and cabinetry adjacent to unit. Pictures taken.
      • Corrective Action(s): Leak must be fixed. Unit must be moved and area under and beside cleaned and dried. Take pictures and send to me when completed. Follow up in one month or send picture of completed work.
