    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Chlorine sanitizer in the dishwasher initially registered at 0 ppm. However, a chlorine concentration of 100 ppm was achieved after replacing the sanitizer bucket.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Shelving in the basement dry storage area is made of unfinished wood. This interferes with adequate cleaning and sanitizing, which could lead to pathogen growth and attraction of pests. Corrective action: Shelving must be finished by coating with paint and/or a sealant to render the surface as smooth, durable, easily cleanable, and impervious to moisture.

      • Observed two (2) burnt out light tubes in the ceiling light fixtures at/near the exit door - requiring replacing with new tubes to provide more adequate levels of lighting to easier facilitate cleaning.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • BASEMENT WALK-IN COOLER:Observed a slight build-up of dust on the ceiling + fan grill cover at the ceiling fan unit.Please clean the above surfaces and on a regular/routine basis to prevent this build-up of dust which potentially could then fall onto the food stored here.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • New flooring finish installation noted in the kitchen; however, observed that the counter finish for the countertop across from the dishwashing/sink area was deterioated and counter edging was missing in some areas. Current condition of countertop does not facilitate easier cleaning and sanitizing and existing countertop finish should be replaced.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Two (2) light tubes for the ceiling light fixture in the corner of the kitchen where the cupboards are located were observed to be burnt out and require replacement with new tubes to provide more adequate lighting to easier facilitate cleaning.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Replace all burnt out/non-functioning/missing light tubes in the ceiling light fixtures near the front door of the kitchen area. There are a total of five (5) light tubes which require replacing and which is required to provide more adequate lighting to easier facilitate cleaning.2) Ceiling finish (currently painted) near the commercial dishwasher is peeling paint and needs to be re-finished with a surface that is light in color, impervious to water, and is able to tolerate humidity and heat from the commercial dishwasher. The finish currently is not in compliance and as discussed would not move forward with simply repainting which will ultimately fail again.UPDATE ON AUGUST 30, 2023:Repainting of same ceiling finish will be allowed by EPH following in-person chat with Beaver Foundation CAO. Would recommend a water based paint such as latex or semi-gloss paint which apparently is more resistant to humidity than oil based paints. Hopefully, this option will be the long term solution and this same deficiency will need to be revisited if the paint finish fails again.3) Observed a small puddle of water in the corner of the basement walk-in cooler where the buckets of pie filling is located. Discussions with the Lodge Manager afterwards confirms that the moisture is from the fan unit on the ceiling during the defrost. The floor area should be mopped/cleaned and then a shallow bucket/container should be placed underneath to capture water dripping for future defrost.4) Observed a bag of onion and donated potatoes on the floor and on cardboard placed on the floor in the basement walk-in cooler respectively. Please ensure to store these food items at least 1' off the floor on preferably shelving units for proper storage of foods. This is critical in the event of a water or sewer back-up in the basement.
