      • Observation (CORRECTED DURING INSPECTION): Observed several food items being cooled, large portions of cooked meat, rice, tempura shrimp, cooked chicken. All sitting at room temperature at various temperatures
      • Corrective Action(s): Discsussed and educated owner and staff on proper cooling.
      • 1) place food is smaller, shallow containers
      • 2) 60C to 20C within 2 hrs (at room temperature) actively stiring or placing large containers in ice bath will help cool faster
      • 3) 20C to 4C within 4 hrs (in the fridge)
      • -monitor time and temperature of the foods that are being cooled

      • Observation (CORRECTED DURING INSPECTION): Observed staff wearing gloves, move from one task (raw meat) wipe gloved hands on a cloth, then about to handle ready to eat foods
      • Corrective Action(s): EHO educated staff and owner on proper hand washing.
      • 1) remove and throw out gloves
      • 2) wash hands with warm water and soap
      • 3) dry hands with paper towels not cloth
      • 4) then put on a new pair of gloves
