      • Towels and wood board used to cover pizza dough in coolers.Towels are not allowed, and wood boards need replacement.

      • Front preparation cooler was measured at 8C.It was noted that the bottom of the cooler was recently stocked with ready to use pizza dough in pans.

      • Tape residue and tape on the ice maker lid does not allow for proper cleaning.

      • Back storage area had an accumulation of dust etc.Dough mixer had a build up of flour/oil in hard-to-reach areas on outside of machine.

      • Several types of meat items were left on the counter and in the back to defrost at room temperature.These include raw hamburger in the back area and a couple packages of deli meat.

      • Damp towels were used to cover formed pizza dough in the cooler. The use of these towels is not allowed as they can pose a contamination hazard.
