   • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
     • ***Reusable cleaning cloths were being used and left draped over the sanitizer spray bottle. Discussed that if re-using the cloths for wiping they were to be stored in a sanitizer solution OR they could be used once then put in for laundering and a clean cloth used. Operator will not be re-using the cloths. She will get a supply and only use one time.
