      • 1. Ambient temperature of the prep table cooler was approximately 13 degrees Celsius. 2. Hot holding temperature was 53 degrees Celsius. Temperatures were adjusted on both units during the inspection, and water was replenished in the steam table. The hot holding temperature reached above 60 degrees Celsius. Due to time constraints, PHI(T) was not able to confirm that the prep table cooler reached a temperature of 4 degrees Celsius or lower. Operators were advised to move high risk foods into a functional cooler. Facility indicated that they would not open until the issue with the cooler was resolved.
