      • - Boxes with food were stored on the ground in the walk-in cooler and walk-in freezer. - Please ensure food boxes are stored 6 inches (15 cm) from the ground.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • - There was sunlight coming from the back door. - Please repair/replace the weatherstripping of the door or ensure the door can close to prevent any opening to allow sunlight.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • - The meat slicer had debris build up in the equipment's crevices. - Please ensure that the meat slicer is taken apart and cleaned thoroughly following the manufacturer's instructions.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • - There was dust build-up on the fume hood area above the pizza oven. - There is debris and grease build-up underneath the grill and fry area. - Please ensure the indicated areas during the walk-through are cleaned and free of build-up.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Sanitizer was not pulling through. Operator has called for repair personnel to come maintenance the machine. They were just on site but unfortunately the machine is not dispensing the sanitizer. OUTSTANDING (NEW PUMP ORDERED)

      • Sanitizer was not pulling through. Operator has called for repair personnel to come maintenance the machine. They were just on site but unfortunately the machine is not dispensing the sanitizer.

      • Please clean underneath the ice machine. The raw wood shelving needs to be impervious to moisture to facilitate easy cleaning i.e. painted.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Meat sauce ~44 C at the time of inspection. Hot foods i.e. meat sauce must be heated to 74 C before being transferred to the hot holding unit. This was moved to the stove to reheat during the inspection.When heating foods in the microwave please ensure the plastic can tolerate the heat, if not please use a glass bowl. As discussed, many plastic containers that foods come in i.e. sour cream containers etc. are not meant to be heated as they may off gas.The gravy was 60 C and the cold storage was at satisfactory temperatures.
