- Observation: This is a REPEAT violation!
- Dough Sheeter observed with rodent droppings in the back compartment. Sheeter observed caked with dried up grease and flour.
- Corrective Action(s): DO NOT USE SHEETER UNTIL IT HAS BEEN CLEANED AND DISINFECTED.
- Take sheeter apparent, remove droppings, clean with soap and water, disinfect with 1000ppm chlorine and then rinse again before using.

- Please email EHO pictures of sheeter taken apart for cleaning and pictures of cleaned/sanitized sheeter.
- Operator needs to be able to demostrate that they can keep sheeter free of contamination.
- Sheeter to be taken apart and cleaned DAILY.
- If sheeter is observed with rodent droppings in the next routine inspection, this sheeter will not be allowed to continued to be used. Operator will need to either manually roll out pizza dough or propose operating a new sheeter that they can maintain in a sanitary manner.

- Corrective Action(s): DO NOT USE sheeter until it has been fully taken apart, cleaned, and disinfected. Please disinfect with 1000ppm chlorine (20ml bleach to 1L water) then rinse and air dry.

- Observation (CORRECTED DURING INSPECTION): No paper towels available at the handsink. Reusable towels are being used to dry hands. Paper towel dispenser is broken.
- Corrective Action(s): Operator stated that paper towel dispenser is bring ordered. Napkins are being used for now to dry hands until paper towels are obtained. Please obtain paper towels immediately. Reusable towles cannot be used to dry hands as it cannot be adequately sanitized in between uses.
