      • Observation: New larger prep cooler installed in the kitchen upstairs. This prep cooler does not have a proper lid, baking sheets are being used instead. This makes it hard for the cooler to maintain 4C when it's busy and when it's hot in the facility.
      • Corrective Action(s): Have proper lids made for the cooler to ensure staff can close the lids and maintain 4C at all times. Have the cooler permanently fixed as the staff state it's currently been "temporarily fixed" by Sept 10/25

      • Observation: Sink and Surface sanitizer at 0ppm. Staff do not have another method of sanitizing surfaces in the kitchen or in the tasting room.
      • Corrective Action(s): Ensure sink and surface sanitizer is at at minimum of 272ppm. Have the technician come in and repair the dispenser. In the meantime purchase bleach and make a solution of 100ppm (1/2 teaspoon of bleach to 1 liter of water) by tomorrow July 17/24.

      • Observation: None of the spray bottles are labelled through out the premises.
      • Corrective Action(s): Ensure all spray bottles are labelled as to their contents (sanitizer, water etc) to ensure they are not mixed up. by July 17/24

      • Observation: Dishwasher was ran twice and only reached 65-67 degrees C at the plate surface.
      • Dishwasher does not appear to be draining correctly.
      • Corrective Action(s): Do not use until it has been repaired. Ensure that the final rinse reaches 71 degrees C at the plate surface. Staff called in service person who is expected within an hour. To use disposable dishware and glasswasher until it has been addressed.

      • Observation (CORRECTED DURING INSPECTION): Paper towels were not avaialable at the hand washing sink in downstairs lounge area. Staff stated they were using bar towels to dry hands.
      • Corrective Action(s): Hands must be dried with single-use paper towels. Ensure this hand washing station is equipped with a paper towel dispenser.
