      • Observation: Fruit fly population observed at bar. Seems to be limited to two dump sink plumbing network, and rinse station area. The drain network is likely where the majority of the breeding is happening. This drain network is open and easily accessible to fruit flies.
      • Corrective Action(s): Recommend daily cleaning and chemical application to the sink drain network at the end of the day to get rid of the fruit flies. Also, capping the drains will help minimize some access to the drains, although the dump sinks are, i think, open below. It's not a closed system. You may need to close the drain system to truly control fly access to the drain network.

    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: Right side prep cooler in kitchen measured 12 C at inserts (hard boiled eggs and tarter sauce measured) and below inside unit. Observed the practice of keeping inserts of food inside a secondary insert. This will act as a barrier to temperature control, especially if the clamshell lid remains open for extended times. Also noted some of the sauces in squeeze bottles and salad bowls placed in manner that prevents clamshell lid from closing. This will also act as a barrier to the unit maintaining food at 4 C or less.
      • Corrective Action(s): Tarter sauce and eggs discarded. Immediately supplement sauces with ice bath, relocate sauce squeeze bottles in manner that will allow lid to close. Have unit serviced and/or unit temperature gauge adjusted to keep food colder and below 4 C. This will be reviewed at follow up inspection date noted on report.

      • Observation: Mouse droppings noted in dry food storage area, in patio cupboard, and in freezer storage room. Main kitchen space not evaluated, but likely a key food source for mice. Minor fruit fly population noted at bar. Possible carpenter ants noted in patio area.
      • Corrective Action(s): Continue to improve daily clean up to remove food sources for mice, remove dropping to allow Pest Control technician to monitor movement patterns and implement controls. Trapping already underway for ants on patio.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Walk-in cooler floor, kitchen floor, and floor in dry food storage observed dirty.
      • Corrective Action(s): Improve quality and/or frequency of cleaning in identified areas including in corners, along walls, around legs of shelves/equipment etc.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Still observing too much built up food debris accumulation in areas of the kitchen i.e. edges of equipment and around legs of equipment, hard to reach areas behind cookline and dishpit. Also noted similar food accumulations mixed with mouse droppings below bar sink area.
      • Corrective Action(s): Continue to make improvements to regular cleaning frequency and quality such that greasy grimy build up as noted first get removed and second don't build up again. Staff need to do a better job in the hard to reach areas as discussed. Any build up of food debris will be counter to effective pest control initiatives.

      • Observation: Fruit flies (minor), and mouse activity noted. Mop sink and mop heads dirty. Mouse activity mostly around storage area shelves and insulation observed under same area at consealed cabinet. Discuss with operator.
      • Corrective Action(s): Target all drains, including the mop sink drain and mop heads as discussed. Make sure any random accumulations of water are removed daily (dishwasher area).

      • Observation: 1. Chemical dispensing hoses in sink have discoloration and soiled.
      • 2. Ice scoop stored in ice machine, and ice tray.
      • 3. Areas under and behind equipment have food debris accumulations.
      • 4. Dishwasher has food particulate accumulations,
      • Corrective Action(s): 1. Clean and reduce size of chemical hoses.
      • 2. Ice scoop to be stored in a washable container.
      • 3. Clean areas under equipment. Walk-in cooler shelving to be 6 inches above floor or on casters for cleaning access
      • 4. Dishwasher to be routinely cleaned.
