      • Bleach sanitizing solution was too concentrated.- ensure bleach sanitizer is measured at 100ppm using chlorine test strips - 1/2 tsp of 5% bleach per 1 liter of water will give 100ppm
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Cloths were noted on the counter.- if cloths are to be used to wipe surfaces, ensure they are laundered after each use and not reused, otherwise, use single use paper towel
    • 09. Are chemicals stored and handled in a safe manner?
      • Bleach sanitizer bottle was not labelled to indicate its contents- ensure all chemical bottles are labeled correctly

      • A written cleaning schedule and cleaning log were not available during the inspection- establish a cleaning schedule and log that is followed when the kitchen is in use.
