    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: No sanitizer in red sanibucket. Measured zero. Staff was using hot water and soap as substitute. Staff tried to get supplied, but indicated sink and surface dispenser was empty.
      • Corrective Action(s): Make sure staff have sanitizer supplied to them for each 2 hour block of the day as the sanitizer in the bucket will lose effectiveness with use. Two hours is the proper rotation. I will have to follow up to ensure this is done.

      • Observation: Paper towel dispenser was empty and the liquid soap dispenser was not dispensing.
      • Corrective Action(s): Make sure staff are setting this station up properly at the beginning of each day. Follow up inspection on date noted on report.

      • Observation: Ants noticed rummaging around the counter space. Noted ant trap near MerryChef oven. No accumulation of sugars or food visible on counter or anwhere in food premises. Looks like ants coming up through electrical/plumbing cut outs in counter.
      • Corrective Action(s): Continue to keep sugar spills cleaned up. Add mouse trap to coffeee service area and below in cabinets to reduce ant activity.

      • Observation (CORRECTED DURING INSPECTION): Liquid soap dispenser not working.
      • Corrective Action(s): Operator to provide temporary dispenser until replacement arrives. Chemical supply company to replace unit tomorrow. Recommend re-locate away from prep area or move defined prep area to alternate area.

      • Observation: Prep area for Merry Chef products subject to splashing from sinks, potentially providing contamination to food.
      • Corrective Action(s): Relocate prep area or create a physical barrier between handwashing/prep sink and food prep areas. Operator to investigate and fix issue.

      • Observation (CORRECTED DURING INSPECTION): Mini fridge for milk and other dairy/non-dairy coffee items not maintaining proper temperature. Measured 10 to 12 C. Freezer chamber significantly frosted and magnetic seal along top of unit missing. Discussed with staff and unit due for replacement.
      • Corrective Action(s): Staff to defrost unit immediately. Staff to remove all products from unit and store in altenate cooling unit until mini fridge operating and able to keep food below 4 C. For product needed at the coffee station, supplement with ice in secondary bin to help dairy products maintain 4 C. Review for new unit in September.
