    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Chlorine based dishwasher was measured at 20ppm. Please ensure that the sanitizer is dispensing at the appropriate concentration (i.e., chlorine at 100ppm) in order to sanitize the dishes and prevent growth of unwanted bacteria. Ensure to monitor the concentration of the sanitizer by using chlorine test strips.Three compartment sink also available on-site. Ensure to sanitize the dishes in sink using quats sanitizer at 200ppm.

      • No quats test strips were available on-site. Please obtain appropriate test strips in order to measure the concentration of the sanitizer (i.e, quats at 200ppm).Chlorine test strips were available on-site.

      • Back door is not sealed properly. Please ensure to weatherstrip the door to prevent potential pest entry.
