      • a bottle of sparkling water and a spray water bottle were stored inside a functional ice machine in the main floor bar. Unsure the cleanliness of the bottles. - Remove the bottles from the ice machine, remove all the ice, and sanitize the ice machine before operating again.The scoops for the ice machine in the main floor bar and the 3rd floor were not protected (stored inside the machine with handle touching the ice and stored directly on top of the ice machine). - Store the scoop with a hanger or on a clean tray/plate

      • Garlic in oil and cooked sauce (garlic with shallot) were left at room temperature for rush hours serving and store leftover products back to the fridge after rush hours. - both products are considered high-risk perishable, temperature abuse is not allowed. Time as public health control measure is permitted once procedure is reviewed and approved. Maximum of 2 hours storing at room temperature is permitted with proper labeling system and training procedures.Garlic in oil risk information sent via email.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The low temperature dishwashers at the 3rd floor kitchen and the basement kitchen were not able to dispense sufficient amount of sanitizer at the rinsing cycle.- Ensure a 100ppm bleach sanitizer was detectable at the rinsing cycle. Ecolab serviced the machine and provided a report that both dishwashers were repaired the same day.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The sanitizer concentration from the dishwasher was not confirmed daily. - Ensure the sanitizer concentration is confirmed daily at the beginning of the day, and record it.

      • The door at the mop sink (facing the food prep area) was not yet installed to prevent cross-contamination to the food prep area in the basement kitchen.- Install the door

      • A display thermometer was not available at the cold prep fridge in the banquet kitchen.- Equip a display thermometer.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel and or paper towel dispenser are missing in the main floor washroom, banquet kitchen and bar.No garbage bin was available at the banquet kitchen and bar.- Ensure supplies are stocked.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Tapes were noted on the floor of the walk-in cooler in the basement kitchen.- Remove the tapes
