    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The concentration of the bleach sanitizer solution measured greater than 1000ppm. The bleach sanitizer solution must measure between 100-200ppm to safely and effectively remove contamination from food contact surfaces. The bottle in use is less than one liter approximately 600mL. Typically, half a teaspoon of bleach is mixed with one liter of water. In this case mix 1/4 of a teaspoon. Demonstrated the amount of bleach to use during the inspection to the operator. The operator remade the solution and it measured 100ppm.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The operators are using a chlorine (bleach) sanitizer solution. No chlorine test strips were available. The operator could not locate them at the time of the inspection. The owner stated they themselves test the concentration in the morning. Chlorine test strips are required to be used regularly to confirm the concentration of the sanitizer solution. Obtain chlorine test strips and ensure it is easily accessible for all staff members to use.

      • Chemical bottles were unlabeled. Please ensure all chemical bottles including the chlorine sanitizer are labeled such that the contents can be identified and safely used.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mouse droppings were observed on the floor in the back room. Please safely clean the droppings and work with the pest control company to abate the pest issue.

      • The chlorine-sanitizer bottle was tested and 0ppm was detected. It was determined that the bottle was improperly mixed and floor cleaner was used instead of the bleach concentrate. The solution was dumped and a 100ppm chlorine solution was mixed. Please ensure all staff are trained on how to properly mix a 100ppm chlorine sanitizer solution and ensure it is being tested daily.

      • *SANITIZER SOLUTION MEASURED 0 PPM CHLORINE. THIS WAS CORRECTED.**STAFF USING REUSABLE RAG WITH SPRAY BOTTLE OF SANITIZER. THIS CAN ONLY BE USED WITH AN OPEN BUCKET OF SANITIZER, SO THAT THE BACTERIA, ETC. PICKED UP BY THE RAG CAN BE KILLED INSIDE THE BUCKET. SINGLE-USE TOWELING (i.e. PAPER TOWELS) MUST BE USED WITH SPRAY SANITIZERS*

      • *STAFF OBSERVED REMOVING AND THEN REUSING PLASTIC GLOVES. ONCE GLOVES ARE REMOVED, WASH HANDS AND PUT ON NEW GLOVES. THE SAME PROCEDURE APPLIES ANY TIME THAT GLOVES ARE CONTAMINATED BY TOUCHING OTHER ITEMS SUCH AS CASH, REGISTER, ETC.*
