- X Trays / containers of uncovered food observed in the freezer and walk-in cooler (tarts, cake, tofu, etc.).- One of the uncovered cake trays in the freezer had a bag of bread fall on top of it. This was removed during the inspection.

- X Containers of peeled vegetables soaking in water were left uncovered in the walk-in cooler. These were covered during the inspection.X Fly traps were set up near food preparation and clean equipment storage areas. Please remove / relocate.

- X Observed several areas and containers covered or lined with used / new cardboard.- Please discontinue use of cardboard and use a more durable, non-porous, cleanable liner instead (ie. trays for drinks can be slid under the containers of oil).

- X Containers used for storage of items were lined with cardboard and had a visible buildup of food debris. These were removed from use and put through the dishwashing machine during the inspection.X The dishwashing machine has a buildup of debris on the top of it just under the temperature gauges. X The industrial mixer and small mixer had food splatter / debris on them.

- Observed fried tofu on flat top at room temperature. Reviewed ensuring food items are cooled as fast as possible or kept hot (60 C or more) to prevent bacteria growth. Food item put in walk-in cooler during inspection

- -There is ice buildup on the ceiling, floor, and some of the products in the walk-in cooler.Corrected During Inspection-Knives and other items (scissors, markers, etc) are being stored in plastic juice jug. Debris observed in bottom of container. Reviewed storage of equipment in a manner that prevent contamination (don't mix items) and keep container clean. Knives removed and container put in dishwasher during inspection. -Observed scoops (liquid measuring cup style) with handle stored directly in food product. Measuring cup removed during inspection.

- X The sanitizer solution in the spray bottles was too strong (> 400 ppm). Sanitizer bottles were manually refilled with ~200ppm Quat.
