    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Approximately 17 turkey legs were discovered in a garbage bag in a chest freezer in the storage truck. Turkey legs measured between 1C and -1C at 12:30pm. Grill marks on the turkey legs indicated that they products has been previously grilled at the Stampede the previous evening and had been placed in the freezer overnight. Products discarded. The drumsticks are purchased pre-cooked and frozen. The operator then smokes / re-heats the product from frozen. They were then freezing any remaining products at the end of the day for re-use the next day. It was explained to the operator for a second time that this is not an acceptable process. Any remaining drumsticks must be discarded at the end of the day.

      • Approximately 130 cooked turkey drumsticks were found in a small chest freezer that was unable to maintain temperature.The internal and external surface temperature of the drumsticks ranged from 44 to 46 degrees Celsius.Products discarded. The drumsticks are purchased pre-cooked and frozen. The operator then smokes / re-heats the product from frozen. They were then freezing any remaining products at the end of the day for re-use the next day. It was explained to the operator that this is not an acceptable process. Any remaining drumsticks must be discarded at the end of the day.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel dispensers at hand wash sinks were empty. Staff re-stocked dispensers during inspection.
