- A probe thermometer was unavailable upon request. Please locate the probe thermometer. Ensure that a probe thermometer is available for measuring the internal temperature of foods.

- Staff indicated that a sanitizer step is not used when dishwashing. Ensure that all dishes and equipment are submerged into a 100PPM chlorine solution for 2 minutes after they have been washed and rinsed. Ensure that all staff are trained on manual dishwashing procedures.

- Staff were unable to locate the sanitizer test strips. Ensure that test strips for the sanitizer are available.

- 1. Soap was unavailable at the hand wash sink. Corrected during inspection.2. Paper towel dispenser was broken. A roll of paper towel was stored on the counter. Repair the paper towel dispenser. Ensure that paper towel is stored in such a way to protect against contamination.
