      • Initially sanitizer was too weak. Re-mixed. Ensure concentration is checked through-out event.

      • Some utensils (tongs, knives etc) were brought on-site with food debris/dirty at time of inspection. Prior to using utensils, ensure they are washed, rinsed, and sanitized in 3-compartment sink.

      • Initially could not find probe thermometer. Once located, did not have battery - battery replaced while on-site. Ensure probe thermometer is functional prior to operation.
