    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Lemon scented bleach was observed in use. Please use non scented, food grade bleach for sanitizing purposes in the mobile unit.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Temperature log was not available during inspection. Ensure a temperature log is filled for the coolers containing high risk food during transportation and storage.

      • Thermometers were not available for the camping coolers that are being used to store frozen perogies and precooked sausages.

      • Camping coolers with ice packs are being used to store high risk foods i.e., frozen perogies and precooked sausages, despite there being two mini fridges within the unit. When tested during inspection, these fridges were not at 4C or colder, so they will need to be turned on for longer and verified to be cold enough or be repaired/replaced to store perishable items. Camping coolers are not long-term storage and should there be a need for these moving forward, they will need to be replaced with battery operated units capable of maintaining 4C.

      • A probe thermometer was not available in the truck at time of inspection. Operator brought one from the warehouse. Ensure a probe thermometer is available at all times for confirming reheating temperature of minimum 74C for sausages.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The 3-compartment dishwashing sink was covered with a piece of plexiglass. When removed at the request of the PHI, the sink appeared dusty and there was debris suggesting it has not been used in some time. Operator stated he is routinely returning dishes to his warehouse to wash - however due to his mobile being a Type E, he must have access to dishwashing to perform the level of food handling that he does. Sink must be unblocked and accessible when the mobile unit is in use.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control record was not available during inspection. Ensure pest control checklist is completed monthly while facility is in use.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The hot water faucet of the 3 compartment sink was not functioning properly. Please repair or replace

      • One of the sides of the faux marble countertop, by the food preparation area had an unfinished edge that was not smooth durable or easy to clean. Please repair or replace. Unfinished wood was also observed under the shelving of the gas stove. Please remove or finish the wood to ensure it is smooth, impervious to moisture and easy to clean.

      • The hose used to fill the mobile unit is dirty and does not have a cap or protection from contamination.
