      • No approved sanitizer was observed during the inspection. Ensure that a 100ppm bleach/chlorine or 200ppm QUAT sanitizer is available.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No bleach/chlorine or QUAT test strips were observed. Ensure appropriate test strips are available to ensure sanitizers are maintained at proper concentrations.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher was connected to detergent and rinse agent. However, after 5 cycles, the maximum hot water temperature reached 70C. Ensure the unit can reach a minimum temperature of 71C at the dish level during sanitizing. You may use a min/max waterproof thermometer to verify. Manual sink was an oversized one compartment sink. Sink was equipped with detergent and lemon scented bleach. Please refrain from using scented/fibre guard protection bleach. Use regular bleach. Should there be any future renovations,
