      • In accordance with Section 2.10(b) of the NS Food Retail and Food Services Code, you must provide hot and cold water, under adequate pressure, and in sufficient quantities to meet the peak demands throughout the food premise.

    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Staff mentioned that they were using the two-compartment dishwashing sink for handwashing. Noticed dirty dishes in the sinks too. Handwashing must be done at designated handwashing stations.
    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • Ice scoops were kept inside the ice machines ( Back Kitchen & FOH ) on ice at the time of inspection. Scoops were moved to containers.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Mold build-up inside the ice machine observed during inspection. Clean and sanitize the ice machine immediately. Also, ensure the ice machine is cleaned regularly.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Pest droppings were observed throughout the back kitchen and office/storage, especially along the walls and corners. To comply: - Improve cleaning practices - Excess garbage/cardboard that is not in use should not be kept in the facility, cluttered as it promotes pests. - Prepare and maintain a cleaning & disinfection schedule and log and keep it on site.
    • 33(2) The operator must ensure that all refrigeration and heat-holding equipment has a temperature measuring device that is accurate and in good repair.
      • In accordance with Section 4.1.11 of the Nova Scotia Food Services and Food Retail Code, you must: have a functioning thermometer(s) on all heating and cooling equipment; and calibrate all thermometers routinely and maintain calibration logs. Staff was unable to locate thermometers inside the refrigeration units in the back. To comply: - Ensure the thermometers are accessible. - Prepare and maintain a temperature log.

      • Damaged/missing floor tiles observed in the freezer storage room. Repair or replace damaged/missing floor tiles so that are smooth, non-porous, and easily cleanable.
