      • Observation (CORRECTED DURING INSPECTION): The concentration of the sanitizer(quats) was excessively high. It was being used undilute.
      • Corrective Action(s): Use the sanitizer dispensing unit and do not take directly from the bottle undiluted. Check with test strips. After washing with detergent all food contact surfaces must be sanitized with this solution or a bleach solution. See the manual warewashing sign for mixing information.
