- The concentration of the bleach sanitizer solution measured >1000ppm.The concentration of bleach should be maintained between 100 to 200ppm to effectively and safely sanitize food contact surfaces. Mix half a teaspoon per litre to achieve 100ppm of bleach. The operator remade the bleach sanitizer solution and measured 100ppm at the time of the inspection.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- The paper towel was placed right beside the clean utensils and food equipment. Food equipment should not be stored where it can be contaminated by the splash/drip of water when reaching for paper towels to dry the hands. The operator placed the paper towel dispenser on the other side of the hand sink at the time of the inspection.
