      • The countertop edge requires repair to ensure the surface is smooth, durable, and impervious to moisture. The use of duct tape as a temporary fix for the missing edge is not an acceptable long-term solution, as it can become damaged, difficult to clean, and may not maintain a sanitary surface. A proper repair or replacement of the edge should be completed to ensure the countertop can be effectively cleaned and maintained.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A dipper well should be considered due to the number of ice cream flavours being offered. During the inspection, the scoop was observed being stored in a glass of visibly dirty water.Other options to consider would be having a dedicated scoop for each flavour or using a small crock pot with warm water to keep scoops clean and ready for use. With this method, scoops would be washed after each use and stored in the clean water crock pot until needed. This would help ensure the scoops are maintained in a sanitary condition and reduce the risk of contamination between uses.

      • The cooler with the sandwiches and pepperoni sticks was ~6 C. As discussed, a thermometer is required to verify the temperature of the fridge.
