      • The low-temperature dishwasher did not have any sanitizer residue after rinsing; rinse aid was run out.- Ensure supplies are equipped, appropriate level of sanitizer is detected after rinsing.No drain stoppers were available for the 3-compartment sink.- Obtain proper drain stoppers for dishwashing.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The only cold prep at the front serving area was measured 10.7C internally. - Ensure temperature is maintained below 4C or lower.
