- There was no thermometer in the fridge.-obtain a thermometer to monitor the temperature of the fridge; it must be 4Celsius or less.

- There was no max reading, waterproof thermometer available to measure the high temperature dishwasher.-the dishwasher must be tested to ensure it reaches 71Celsius at the dish level (you can't rely on the gauge on the display as that is the temperature at the manifold).
