      • FLY CONTROL MEASURES AT BACK DOOR ENTRANCE/EXIT:1) Purchase magnetic screen door to fit over back door entrance for more effective fly control - this is particularly important during food deliveries where the door may be propped open for a significant amount of time.Update on Friday November 22, 2024: magnetic door screen ordered and waiting for delivery/install.2) Purchase a fly light control device and install near the back door entrance for more effective fly control measures. These types of light devices are more sanitary than the sticky fly papers used and ensure the unit purchased is meant for use in a food establishment.Update on Friday November 22, 2024: operator unsure where to order fly light control device and reason why it has not been ordered, As a suggestion only, you can order this device on-line (e.g. - Amazon) and ensure a device meant for a food establishment is purchased. Since it is winter season, timeframe to complete this is on December 31, 2024 for both the door screen and the fly light control device.Finally, as discussed with the Manager, do not use a back yard "bug zapper" in the kitchen facility - not considered sanitary.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • At the time of inspection, it appeared that there was no chlorine for the final sanitizing step in the mechanical dishwasher (CMA - Diversey). The chlorine test strip papers used did not register a reading for any chlorine residual.Subsequently, please reach out to the Diversey Technician to determine what could be the reason why there is no chlorine residual - it is suspected that the line may be clogged/blocked.In the interim, ensure the final sanitizing step is carried out in the third sink of the 3-compartment sinks provided in the kitchen facility until this issue has been resolved.

      • Please provide chlorine test strip papers to verify proper concentration of the final sanitizing step for manual dishwashing.Minimum 100 ppm chlorine is required for proper sanitizing of utensils.During the inspection on February 8, 2024, the Manager informed our Department that the above has not been purchased as of yet.
