- 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
- During the inspection, discussions were held with the Food Service Manager and our Department had obtained the following information:1) Water incident had occurred in the kitchen facility earlier this year due to the lack of insulation in the ceiling cavity where the water pipes are located. Due to the cold snap, the water pipes leaked and resulted in water in the kitchen.2) Small portion of the ceiling finish in the kitchen (e.g. - to the left of the exhaust canopy hood) had to be removed to gain access to the water leak and at the time of inspection the portion of the ceiling is still not finished.3) Confirmed with Food Service Manager that the required insulation has been completed (blown in insulation) and it is just a matter of the ceiling being refinished.4) Once the portion of ceiling is finished, please take a photograph of the completed work and email back to our Department for our final review/approval.

- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- Observed a significant amount of flies in the temporary kitchen facility during the inspection. Since the temporary kitchen is only in operation till next Friday September 27, please ensure Kitchen Staff are diligent in closing the door(s) as quickly as possible entering/exiting the kitchen to prevent entry of flies. Moreover, discourage the use of sticky fly paper devices in the kitchen area due to the potential of dead flies dropping off the device and falling into the food .Finally, if the facility has an existing fly light control device, you are encouraged to mount this device inside the ktichen area for more effective fly control.

- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- Observed a missing portion of coving (where the floor meets the wall) in front of the walk-in freezer. Please reinstall new portion of coving to ensure a finish which will easier facilitate cleaning and prevent accumulation of dirt and debris.
- 23. Is the facility maintained in a clean and sanitary condition?
- As discussed with Kitchen Manager, observed significant amount of debris on flooring underneath and left of the 3-compartment sinks which requires cleaning and thereafter on a regular and routine basis.
