      • A small jug used as a scoop was stored with the handle touching the food item, fish batter. Ensure that all utensils are stored in a clean and sanitary condition to prevent cross contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Butter and garlic butter were observed stored at room temperature. The facility manager threw out the butter. 2. An open bottle of szechuan sauce was left out at room temperature with manufacturing instructions stating to refrigerate. The bottle was moved into the walk-in cooler.Ensure all high risk food items are stored in appropriate temperatures, 4C or below for food items such as butter.

      • The hand sink located in the preparation area had a weak supply of water pressure. Ensure that all hand sinks are fully supplied with running hot and cold water.

      • An aircon unit was observed with tubing running and draining into the hand sink located at the back preparation area. Ensure that the hand sink is clear and used only for hand washing purposes.

      • A blanket was observed stored next to a shelf with food items in the back of the facility. Organize the shelf and ensure all items not associated with food preparation, handlings, and storage are stored separately from food and food associated items.

      • Two cans of roasted red pepper were dented.Operator removed the cans from the shelf.Ensure that all canned food items are undamaged and undented.

      • A food item, bag of rice, in the storage room was inadequately covered. Operator closed the bag during inspection.Ensure that all food items are covered during storage to protect them from contamination.

      • 1. The storage container of clean food utensils such as kitchen tongs and ladles had food debris. Clean and sanitize the container. Ensure all food utensils are stored in a clean and sanitary condition. 2. Uncovered plastic forks for customer use were stored with the business ends facing different directions. Ensure the business ends of all cutlery are facing the same direction to prevent customer contamination.
